Farmstead Hams (No Chemicals or Natural Nitrates)

Our nitrate-free hams are smoked over local Red Gums. Being nitrate-free, they are very much Farmstead style hams – pale in colour (think light roast beef colour with a touch of pink) and with a much more delicate smoky flavour than traditional hams. These are exceptional hams that really bring out the flavour of the pork and are much less salty than traditional hams can be. These are also gluten-free and free from any nitrates and chemical preservatives.

All our hams are on-the-bone and range in size from 5kg-7kg with the majority of hams being around 5kg. They are from our beautiful Berkshire pigs, and the only difference between these Farmstead Hams and our Traditional Hams is the method by which they have been cured. Our pigs are born and raised outdoors on our regenerative farm, munching away on their chemical-free “salad bar” pastures, digging in our mineral-rich volcanic soils along with delicious whey from Goldfields Farmhouse Cheese.

To order, you will be required to pay a non-refundable $50 deposit and at checkout, you can indicate the size you would prefer. However, bear in mind, our pigs are special because they are “slow-grown”. Being 100% outdoors (with huts for shelter), their size will depend on the weather conditions amongst other factors (pigs are like us – some are more piggy with their food!) Hence your size preference might be a kilo or so on either side of your preferred size.

As we get closer to Christmas, we will be in contact with you to advise the final size of your ham and to confirm the final payment amount along with collection details.
